Our delicious recipe for May
Alpine apple aroma soup with lemon balm
For 4 persons:
1 Golden Delicious apple (100g)
40 g onion into cubes cut
20 g butter
½ spoon flour
50 ml white wine
600 ml clear broth
100 ml milch
100 ml cream
20 g cold butter
Speices:
Salt
Pepper
Chilly
1 pinch ginger
1 pinch lemon grated skins
Garnish:
4 prawn tails
4 lemon balm leaf
4 apple pearls
1 red chilly
4 wood sticks
Preparation:
Cut out from the apple 4 spheres and let them boild in water for 30 seconds, then take them out, cover and let them get cool.
Now take off the apple core and cut it in a coarse way.
Heat a pot, add butter and the white onion, then the apple pieces.
Work flour together with white wine and clear broth, add milch and cream and then let it heat.
Flavour with a little bit of chilly, a pinch of ginger, lemon grated skins, pepper and salt. After 20 minutes add the cold butter and work everything together in the mixer.
Peel the prawn and cook them quickly in a pot with a little bit of oil.
Cooking time of the soup: 20 minutes
